Purpose and Rationale

Qualification Title: Bachelor of Education in Hotel Keeping and Catering

Purpose:

By attaining this qualification, the learner would be able to play a significant role in the provision of training and facilitating as required by the Department of Basic Education and the Hospitality Industry. This qualification is intended for learners seeking a focused teaching Degree with strong subject and educational theory competence.

The qualification is an integrated qualification, where the learner holding the qualification will have the competencies (knowledge and skills) to:

  • Teach specialist subjects in the field of Hotel keeping and Catering thereby implementing outcome-based education in this field for grades 8-12.
  • Teach/act as facilitators, trainers and assessors in other Higher Education and Training (HET) institutions as well as other sectors of the Hospitality industry, e.g. Workplace Education (WE).

Rationale:

Since 1994 the demand for hospitality services in South Africa has increased dramatically; to such an extent that it has been introduced into schools as a full-blown subject. The majority of existing hospitality teachers have no specialized training due to a serious lack of training facilities.

Outcomes

  1. Identify, assess, formulate and solve problems in the fields of hospitality teaching.
  2. Perform and/or manage: Training, facilitating and assessment activities. Occupational health and safety resources. Hospitality operations. Professional Food preparation. Restaurant and banqueting operations. Food costing. Human resources.
  3. Develop, assess, evaluate and improve the above-mentioned areas innovatively from principles of education, management and other basic sciences.

Assessment Criteria

The following Associated Assessment Criteria are assessed in an integrated manner across all the Exit Level Outcomes:

  1. Demonstrate the competencies required for contextual roles.
  2. Present evidence of practical competence in the specialist role.
  3. Demonstrate understanding of the knowledge and thinking which underpins foundational competencies.

Integrated Assessment includes:

  • Written, oral, and practical examinations moderated by internal and external assessors.
  • Assessment of practical work, assignments, projects, micro-lessons, school practice, experiential training in industry, and a portfolio.
  • Portfolios.
  • Simulations.
  • Workplace assessments.
  • Written examinations.
  • Oral examinations.
  • Research and workplace-oriented assignments and projects to aid in formative and summative assessment.
